A Rotel Wrap!

This is for that moment when you are sick of the usual foods you are eating, just a plain chicken wrap is driving you insane, and you don’t mind a little bit of kick. And by kick I mean, you don’t mind a little green pepper bite!

Cook Time: 15 minutes

Marinate Time (if preferred): about 3-4 hours

Makes: Two – Three Wraps

Ingredients:

1 large piece of boneless chicken breast

Tortilla Shells

2-3 cups of Sun Dried Tomato Vinaigrette Dressing (Kraft)

1/2 of a small can of Rotel (I used diced tomatoes with green peppers but there’s a ton of choices!)

Chopped Lettuce

Shredded Cheddar Cheese

Ranch Dressing

Instructions:

To Marinate -

Put chicken in a zip lock bag with the vinaigrette dressing, seal, and lay in the refrigerator to marinate for 3-4 hours or longer.

Cooking -

Defrost chicken if not thawed completely.

Put a skillet on medium heat and spray Pam or dab a little oil in the skillet.

Dice chicken into cube size pieces.

Throw the chicken in the pan and let it cook for about ten minutes making sure it’s cooked all the way through.

Turn the skillet down to low or warm and add 1/2 small can of Rotel in the skillet.

While it’s simmering chop lettuce and put in a small container with a lid.

Add shredded cheese to the container.

Add Ranch dressing to the container (your preference on how much).

Close the container and shake it up really good so it’s all mixed up and there is a little ranch on every piece!

Pull out your tortilla shell, add chicken & tomatoes, add lettuce mixture, wrap it up & eat!!

If you are anything like me this is what you’re wrap will look like in seconds! <3 I love a nice change of pace when it comes to food!

This is the kind of meal I always look forward to during lunch. I’ll marinate the chicken in the morning and know it won’t take that long to make – which when you have a toddler is a must! It’s also fantastic for when you are really hungry but don’t want something that heavy to eat. If you aren’t a green pepper fan, you can always do just diced tomatoes or any of the other rotel’s if you are feeling brave!

Chicken Cacciatore Recipe

Chicken Cacciatore is a staple in this house because we have probably once every two weeks and all the ingredients are constantly in the house so I don’t have to wonder if we are missing anything ;)

Ingredients:

Chicken (I buy pre-cooked frozen grilled chicken)

Two cans of tomato sauce

One can of tomato paste

1/2 teaspoon Garlic Salt

1/4 teaspoon Pepper

Two cups of Rice

Two cups of Water

Makes enough for four people!

My mother used to make this meal all the time and I remember thinking it was weird when I was growing up but now I understand why she made it, and love eating it as much as she does too!!

Directions:

Heat up a pan and throw in the chicken, let it cook for 3-5 minutes.

I take the chicken out and cut it into bite size pieces, this is completely optional it just makes my life and Emma’s life easier so we can eat faster ;)

I throw it back in the pot to let it warm up while I open up the cans of tomato sauce and paste

Add two cans of tomato sauce and one can of tomato paste and mix it well!

Add the garlic and pepper. I gave you measurements above but I tend to not measure. I shake the pepper and garlic around in a circle once or twice! Stir it all up and let it cook on low.

Then put two cups of water in a pot and let it sit until it starts boiling.

Once the water is boiling add two cups of rice and mix well. Immediately take it off the stove!

Put a cover on the top and let it sit for about 10 minutes. You’ll know it’s ready when the rice is almost completely dry!

Then it’s ready to serve! This meal has a little bit of a bite but it’s delicious!! If you’d like it with a little less or more bite just adjust the pepper and garlic more or less until you are satisfied!

Maqlubah: Palestinian Chicken, Eggplant, and Rice Casserole

Maqlubah

This is a recipe that my friend Rami introduced to me.  Maqlubah means “upside-down” in Arabic and I have to say, the dish to be aptly named.  This yummy casserole consists of chicken, eggplant, tomatoes, rice, and various spices.  After fully cooked, you take the pot and turn it upside-down over a big pan resulting in a beautifully presented casserole.

Ingredients:

4 Chicken Thighs

1 Onion

2 Large Eggplants

3 Medium Tomatoes

7 Cloves of Garlic

1 1/2 Cups Rice (really, all of the rice you can fit is better!)

Allspice

Pepper

Salt

*Special Spices – rami had a spice mixture from home that he usually adds to his maqlubah.  You can find spices like this at a specialty food store online.  They are not necessary, but Rami says that is where all the magic is, so maybe it is worth the effort!

Instructions:

1. Take chicken thighs, wash in vinegar and salt (something my friend Rami also taught me!).  Take a pot with a small amount of oil, and sautee your chopped onions until slightly caramelized.  Add about 3 cups of warm water, then add the chicken, allspice, salt, pepper, and let sit and get tender in the pot for about 1.5 hours.

2. Cut up two large eggplants, creating thick, round slices.  Add plenty of salt and then sautee in a pan with olive oil.  Once each of the eggplant slices are fried until golden and soft, remove from the sauce pan and place on a plate lined with paper towels to soak up the excess oil.

3.  Now it is time to prepare the rice for later.  Pour the rice into a bowl and wash off in warm water.

4. Now, cut up all of your tomatoes into round slices of medium thickness and peel the 7 cloves of garlic.  Put both in a skillet together with spices and sautee.

5. Grab a clean pot and layer chicken, eggplant, and tomato & garlic until none is left, adding all spices in between layers.  Now, add a few cups of broth from the steaming pot and add your cleaned rice.  Cover the pot and allow the rice to steam atop all of the vegetables and spices.

6.  Once the rice is tender, Take a large pan and flip your pot upside-down over the pan.  Use a spoon to knock on the sides of the pot to end up with a cute upside-down casserole with lots of colors and flavor.

This is a great dish if you are looking to try some delicious foreign delicacies.  It isn’t a quick meal to make, but it is honestly so good, it is worth the wait!  The chicken is fall off the bone tender and all of the flavors come together wonderfully!

Shredded BBQ Chicken

Shredded BBQ Chicken Recipe

Ingredients:

Chicken

Chicken Broth

Italian Dressing

BBQ Sauce

Rolls

Turn the crock pot on low and add frozen chicken

Add enough chicken broth to cover the bottom of the crock pot

Add a quarter to a half container of italian dressing

Cook on low for 4 hours

Add bbq sauce to your liking! I use about 2 cups

Let it cook on low for one hour

Dump the bbq into a strainer to get rid of the loose juices.

Put it on a roll with your favorite toppings!

Enjoy your juicy tangy spicy shredded bbq sandwich :)

Easy Chicken Crockpot Recipe

Nothing is easier than easy chicken!

Ingredients:

Two Frozen Chicken Breasts

Two Cups Chicken Broth

One Can of Cheddar Cheese

One Can of Cream of Chicken

One Scoop of Sour Cream (optional)

1/2 packet of Lipton’s Onion Soup Mix

Egg Noodles

Instructions:

Pull out your crockpot, plug it in, and set it on low! Start out by adding your frozen chicken breasts:

Then I like to add enough chicken broth to cover the bottom of the crockpot.

Add in one can of cheddar cheese

Add in one can of cream of chicken

Add in one half of a packet of onion soup mix

Add a scoop of sour cream, I like to use one large spoonful! (This is optional)

Let your chicken slow cook on low for 4 hours then take a wooden spoon and break up the chicken so that it’s shredded!

I like to add a little shredded cheese to top and let it cook on low for another hour and it’s ready.

While the cheese is melting I boil the egg noodles – wait until you are ready to eat to do this!

One the noodles are ready, drain them, and serve them on the a plate with the easy chicken on top!

This meal is a favorite at our house!
